I like the mix of photos and videos as well. The only problem it is a lot more work to get done.

Maybe someone will know what that stack extension with a device above the smoke is for.

It's a fan. Draws air from the firebox through the flues (artificial draft). Cuts down on the time needed to heat things up and get that water boiling.
